Thimble Cookies

thimble cookies

  • 1/2 cup butter
  • 1/4 cup brown sugar
  • 1 egg yolk
  • 1 cup flour
  • 1 egg white
  • cocoanut
  • jelly

Cream butter, add sugar, egg and flour. Make into small balls. Dip in egg white, which has been beaten. Roll in cocoanut. Place on cookie sheet and press down centre. Bake five minutes. Take from oven, press down again, then bake 10-15 minutes. Put jelly on top when taken from oven, while still hot.
