"Quick Oven. Time 20 minutes.

  • Ingredients. --Short paste, a little jam, 3oz. of pounded almonds, 3 ozs. of bread crumbs, 3 ozs. of sugar, 3 ozs. of melted butter, the yolks of 3 eggs, a little nutmed and lemon.
  • Method. --Line a dish with short pastry, put in a little jam. Beat up the egg yolks and mix them with the bread crumbs, sugar, melted butter, nutmeg and lemon. Stir this mixture well together, and place it over the jam in the dish. Bake in a quick oven for 20 minutes."

This pie did not last long and was followed by demands for more! It is terribly easy to make and not to mention quick to make up. For this particular pie, I used gooseberry jam mixed with a little quince jelly (didn't have enough jam). I just added a quick dash of lemon and grated almost a quarter of a nutmeg which I didn't notice but may have added in adding a little warmth to the pie so would not omit. A quick oven basically means "high heat" so I set the oven to about 400F.
