To make apple cake
Recipe , and English translation, for Apple Cake can be found in MS KANTL Gent 15, (mid 16th century, Dutch)
To make apple cake:
What I did:
- pound the flesh of 4 apples with about 2 cups of grated bread, 1/4 cup of sugar and mixed spices to taste (I used a rather large dash of both cinnamon and ginger)
- For a nicely shaped cake, empty this into a pan, but do not have it too high (see picture)
- bake this in a regular baking oven until it appears set and a knife inserted will come out clean.
- The outside will be firm while the inside will have the consistency of a baked, or boiled, pudding
This was quite nice, sliced up well, and worked out to about 10-12 servings. This also keeps well into the next day and possibly longer.
